This is my own version of a recipe that my mom used when I was a child. She cooked many, many batches that were very similar…but different. I also choose to roll mine in sugar to give them a much more “finished” look than a regular drop cookie. Either way- these are so simple but so yummy! I also keep some of the dough frozen in a log to use at a later date…perfect to have over the upcoming holidays for unexpected guests, or an easy prepare ahead cookie!
10 Tbsp. Butter, room temperature
1 8oz. block cream cheese, room temperature
1 tsp. vanilla
2 cups sugar
2 cups flour
1/2 cup colored sugar
Preheat oven to 350 degrees. Cream butter, cream cheese, and sugar. Add vanilla. Add flour. Roll in one inch balls or use medium cookie scoop. Drop and roll in sugar. Place on cookie sheet and GENTLY press with fork so they slightly flatten. Bake for approx. 10 min. or until edges are slightly golden brown. Remove from oven and let cool on pan 1 min. Transfer to cooling rack to let cool. Enjoy!
