Weeknight Chili

This is dinner tonight at the Kelly’s. Monday nights Russell has class, and I try to use the time to catch up on laundry, errands, etc. so I usually try to do something simple since he isn’t home until around 9pm/10pm! I also try to make it something fairly friendly to being reheated. If you are looking for something simple and serves well for leftovers-here is a great recipe!

Weeknight Chili1 lb. ground beef {or turkey}
2 cans kidney beans
1 can diced tomatoes
2 tbsp. tomato paste
1 cup beer {or broth}
1 medium onion, diced
1 medium green bell pepper, diced
1 Tbsp. chili powder
1 tsp. sugar
1 tsp. oregano
1 tsp. cumin
1 tsp. garlic powder
1/4 tsp. cayenne {OR you can also add a few dashes of hot sauce}
Add salt & pepper to taste.

In large stock pot brown your ground meat. Add onions and peppers. Once meat, peppers, & onions are done, add all remaining ingredients bring to a boil. Reduce heat to medium low and let simmer for at least 15-20 minutes. Around here the only thing left is to add sour cream & cheese!
