Shrimp Po’ Boy

I’m not from New Orleans…and if you are I’m sure you could critique this recipe 😉 I just wanted something simple but different from the average spaghetti, stir fry, etc. that you would normally cook for a weeknight dinner! I pulled inspiration from this Rachael Ray Recipe and this Cooking Light Recipe. This is what came of it…

((NOTE: This makes 2 small{ish} sandwiches so adjust accordingly))

Shrimp Po’ Boys
  • 1/4 cup light mayo
  • 2 Tbsp. sweet pickle relish
  • 1 tsp. garlic, minced
  • 1/4 teaspoon Franks {or other hot sauce}
  • 16 Shrimp
  • 1 1/2 teaspoons Old Bay
  • 2 “Club” rolls
  • 1/2 cup shredded romaine lettuce
  • 4 thin tomato slices {optional}

Combine first 4 ingredients in a small bowl. Heat a large nonstick skillet over medium-high heat. Combine shrimp and Cajun seasoning in a bowl; toss well. Add shrimp to pan; cook until done.

Cut each roll in half horizontally. On bottom half of each roll layer with lettuce and tomato. Spread top half of each roll with about 2 tablespoons mayonnaise mixture; place 8 shrimp on each sandwich. Serve warm.
