Turkey Enchiladas

We hosted Thanksgiving this year, which means that we have quite a bit of leftover Turkey! Russell loves turkey sandwiches, but I wanted to do something different with the turkey for dinner tonight. I’d say it was a sure success since my husband said “if Jesus made enchiladas- this is the recipe he’d use!” 😉 I take that as a pretty high compliment!! Hope you guys enjoy this recipe as much as he did, because of course if you don’t have turkey leftovers you can use a turkey/chicken!

{Leftover} Turkey Enchiladas

6 large flour tortillas
1 small onion
1 small green bell pepper
1 Tbsp. olive oil
1 lb. shredded turkey
1 small can of chopped olives
2 cups shredded Mexican cheese (divided)
1/2 cup sour cream
1/2 cup salsa
1 small can green enchilada sauce

Preheat oven to 400 degrees. Cook onion & bell pepper in olive oil until tender. Add shredded turkey & spices. In small bowl mix olives, 1 1/2 cups of cheese, sour cream, and salsa. Add turkey mixture to cheese mixture. Spoon into tortillas. Fold tortillas and add to greased casserole dish. Pour enchilada sauce on top. Add remaining 1/2 cup of cheese. Bake for approx. 20 min. or until cheese is melted. Enjoy!
