Monkey Muffins

After seeing some over ripe bananas in the fruit bowl I decided to try something new other than banana bread. I tweaked a recipe I use for blueberry muffins to incorporate mashed bananas and swapped blueberries for chocolate chips! I was feeling a wee bit guilty for swapping chocolate for fruit so I did use a combo of all purpose and whole wheat flour though 😉 Much tastier for breakfast than a loaf of banana bread!


Monkey Muffins

1/2 cup butter

1/2 cup sugar

1/2 cup brown sugar

1 cup mashed banana (about 2 medium bananas)

1 egg

1 teaspoon vanilla

1 teaspoon Kahlua (if on hand)

1/3 cup milk

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup whole wheat flour (or you can use all purpose)

3/4 cup chocolate chips

Preheat oven to 350 degrees. Line muffin pan. Beat butter and sugars together until light. Add mashed banana, egg, flavorings, and milk. In small bowl stir flours, baking soda, baking powder, and salt together. Add flour mixture to wet mixture and stir until only small lumps remain. Stir in Chocolate chips. Load muffin cups with ice cream scoop until 3/4 full. Bake approx. 20 minutes. Transfer to cooling rack, then enjoy!
