Creamy Pesto Tortellini

This dish began because tonight I hadn’t really “planned” anything for dinner. With a husband home from work who was tired and hungry I needed something that was quick but still tasty! This was simple but tastier than frozen pizza. Again. Can I get an Amen, Russell?! I also used what we had on hand, feel free to change it up to your liking!

Creamy Pesto Tortellini

1 package Tortellini (I used 3 cheese)

1-2 Tbsp. olive oil

1 cup fresh broccoli, cut into bite sized pieces

1 cup chicken, cooked & chopped into bite sized pieces

2 cloves garlic, minced

1/2 cup pesto

1/2 cup (whole) milk or cream

1 Tbsp. butter

Salt & Pepper to taste

1/2 cup shredded mozzarella

Put on pot of water to boil. Meanwhile heat olive oil in pan and add broccoli and begin to saute for approximately 4 minutes or until broccoli is beginning to become tender. Add garlic and cook 1 minute longer. Remove from pan and set aside in bowl. Add tortellini to boiling water and cook until al dente according to instructions. In same pan you cooked broccoli, add pesto & milk and cook until combined. Add butter. Return broccoli mixture and COOKED chicken to pan with sauce. Add cooked tortellini and toss. Top with shredded mozzarella and enjoy!
