French Breakfast Puffs

I received Pioneer Woman’s cookbook for Christmas. I LOVE it. I love the photos. I love the way she writes. I love that she isn’t afraid of butter, sugar, and all things yummy. I love Pioneer Woman. You would see more of this lovely ladies recipes except I’m very afraid of what my scale would say if I did! However, a recipe like this deserves every.single.calorie.  They also freeze well so I ate one, left two out for Russell and froze the rest for a treat to be rationed out for later dates!

French Breakfast Puffs

  • 3 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon nutmeg
  • 1 cup sugar
  • ⅔ cup butter (10 1/2 Tbsp) softened
  • 2 eggs
  • 1 cup milk
  • 4 oz. (1/2 block) cream cheese
  • 1-½ cup sugar
  • 3 teaspoons cinnamon
  • 1 stick butter

Preheat oven to 350 degrees. Lightly grease 12 muffin cups.

In a large bowl stir together flour, baking powder, salt, and nutmeg. Set aside.

In a different bowl, cream together 1 cup sugar and butter. Then add eggs and mix again. Add flour mixture and milk alternately to creamed mixture, beating well after each addition.

Fill prepared muffin cups 1/3 full then add (1/12 cube cream cheese) top with more muffin mixture until 2/3 full. Bake at 350 degrees for 20 minutes or until golden brown.

In a bowl, melt stick of butter. In a separate bowl combine remaining sugar and cinnamon. Dip baked muffins in butter, coating thoroughly, then coat with cinnamon-sugar mixture.

Enjoy! & then cry about the calories you may have just consumed.
