Nachos w/ Grilled Fresh Corn Salsa

Sometimes I plan a meal around what we need to use up- pretty often actually! This was one of those nights that I had a few random ingredients- leftover grilled corn on the cob,  honey chipotle chicken that Russell had grilled the night before, and several bags of Tostitos {only $1 a piece from a super doubles coupon trip!} Nachos sounded like a good plan!

Everyone has their favorite way to make nachos {or their own random ingredients}  but this is how ours were layered:

Tortilla Chips- Cheese- Chicken- Cilantro- Fresh Corn Salsa- Olives- Sour Cream

Fresh Corn Salsa:

-Corn from three cobs (approx. 2 cups)

-1 tomato, chopped

-1 TBSP. chopped cilantro

-1 tsp. cumin

-1/2 small red onion

-1 TBSP lime juice
