I saw this recipe while meal planning last week and decided it throw it on the menu even though I was short a few ingredients. Russell thought it sounded tasty too and wanted it for dinner that night- so we improvised. I have noted changes below as well as a link to original source so that you can make it either way you choose! This will definitely be something that will go on our menu again!
1/4 cup honey
1 tbsp. chipotle seasoning
1 tsp. honey mustard
salt & pepper
1 tbsp. canola oil, divided
1/2 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. paprika
2 boneless, skinless chicken breasts
Heat the grill or a grill pan to medium high. In a small bowl whisk together the honey, chipotle seasoning, honey mustard, salt & pepper, and 1 teaspoon oil. Set aside.
Stir together the chili powder, cumin, paprika, and salt & pepper in another medium bowl. Add the chicken breasts & the remaining oil; toss to coat.
Place chicken on the heated grill and cook until about half way done then brush with glaze. Continue basting chicken with glaze until cooked through. Remove from the grill and brush with more sauce as desired. Enjoy!
