Loaded Potato Salad {for a crowd}

I’m pretty behind on posting this recipe since it was made for a Memorial Day cookout that we had. It was a hit though, so I thought I could back track a bit to share.  This recipe yields quite a bit {at least 15 servings} so it is great for any summertime get together. It is also perfect for a delicious side dish for dinner that can be prepared ahead of time {scaled down of course} 🙂

  • 5lb. red skin potatoes
  • 1 lb. bacon
  • 1 pint sour cream
  • Salt & Pepper
  • 2 tsp. Old Bay seasoning
  • bunch of scallions {or chives}
  • 1 1/2 cups cheddar cheese, shredded
Cut potatoes into large chunks, boil, and cook until fork tender. Drain & return potatoes to warm pot. While potatoes are boiling, cook bacon, place on paper towels to drain and crumble into bit size pieces. Chop scallions.  Add bacon, sour cream, salt & pepper, Old Bay, scallions, and cheese to potatoes and stir to coat. Can be served warm or cold.
