Pizza Muffins

I know…Pizza + Muffin? Russell wasn’t thrilled about this hitting our menu. He thought they were going to be less than fantastic so he kept saying “lets try those never tomorrow night!” but I ended up making them one night before he got the chance and he ended up really liking them! We had them for dinner one night with a salad but they would also make a great appetizer in a mini muffin pan!

3/4 cup flour

3/4 teaspoon baking powder

1 tablespoon Italian seasoning

1 clove garlic, minced

3/4 cup milk

1 egg, lightly beaten

1 cup shredded Italian blend {or Mozzarella cheese}

1/4 cup parmesan cheese

1 cup pepperoni, cubed

pizza sauce for dipping

Preheat the oven to 375. Line muffin pan. In a large bowl, whisk together the flour, baking powder and seasoning; whisk in the milk and egg. Stir in the garlic, mozzarella, parmesan and pepperoni; let stand for 10 minutes. Stir and divide among muffin cups. Bake until approx. 20 min. or until golden brown. Serve with warm sauce. Enjoy!
